The unit is designed to impart the trainee with skills and knowledge required in food plant design, utilities, sanitation and safety, the trainee is given knowledge of heating , cooling and raw materials handling.
At the of the unit the trainee should be able to
- Understand the role of food engineering in food industry
- Design plant layout
- ensure sanitation and waste disposal
- Describe food plant utilities
- Observe safety of food processing
- Adhere to procedure of material acquisition and handling
- Operate various materials handling equipment
- Carry out unit operation in food engineering
