The unit is designed to impart the trainee with skills and knowledge required in food plant design, utilities, sanitation and safety, the trainee is given knowledge of heating , cooling and raw materials handling.

At the of the unit the trainee should be able to

  1. Understand the role of food engineering in food industry
  2. Design plant layout
  3. ensure sanitation and waste disposal
  4. Describe food plant utilities
  5. Observe safety of food processing
  6. Adhere to procedure of material acquisition and handling
  7. Operate various materials handling equipment
  8. Carry out unit operation in food engineering
